Natural Process: The Fruit & Sugar Bomb

Natural process specialty coffee with berries, tropical fruit and jammy sweetness. Heavy body and big flavor, from Ethiopia to Brazil.

Natural Process Coffee Beans Explained

Looking for natural process coffee? Natural, or dry process, is the oldest method of all: the cherry dries with the fruit still on the bean, which brings berries, tropical fruit and jammy sweetness with a heavier body. It is the style that first made Ethiopian coffee famous.

Today naturals come from Brazil, Colombia, Uganda and beyond, in everything from fruit bombs to chocolatey espresso. Curious about other methods? Our processing guide compares them.

What Does Natural Coffee Taste Like?

Think strawberry jam, mango and dried fruit. Jungle Fruit from our partners at COFFEE PLANT is a natural blend from Uganda and Ethiopia with mango and passion fruit, Very Berry blends natural and washed Ethiopian beans for strawberry, raspberry and apricot, and Tropik from HAYB, grown in Tolima, Colombia, brings tropical fruit and a splash of rum.

HAYB Ethiopia takes the style to the espresso machine: a natural Guji lot with wild strawberry jam, stone fruit and a milk chocolate finish.

Natural Beyond Ethiopia

Brazil does natural beautifully, in a chocolate and nut direction. Brewlab Daily is a natural Brazilian lot with smooth chocolate and gentle nuttiness, while Classic from HAYB mixes Brazilian naturals from Cerrado, Minas Gerais with a fruity splash from Africa.

For espresso, Brazil Origin and Brazil Mogiana are both natural dark roasts, built around cocoa, milk chocolate and low acidity. That is why naturals are such a good base for milk drinks.

What is natural process coffee?

The whole coffee cherry is dried with its fruit still on the bean before the seed is removed. The sugars from the fruit soak into the bean and give sweeter, fruitier flavors and a heavier body than washed coffee. It is the oldest processing method and still one of the most popular.

Does natural coffee taste fermented?

A well-made natural tastes of ripe fruit, jam and sweetness. Controlled fermentation is part of the style, and the best lots stay clean, with berries or tropical fruit instead of off flavors. If a natural tastes funky or boozy, it is usually a style choice by the producer, and the product page tells you what to expect.

Natural or washed: which should I choose?

Choose natural for fruit, sweetness and body, and washed for clarity and a tea-like cup. Neither is better, they are different styles. Compare with our washed coffees to taste the difference side by side, ideally brewed the same way. If you are not sure, try one of each in the same brewer and compare them while the beans are fresh.

Is natural coffee good for espresso?

Yes, many are. Brazilian naturals make chocolatey, nutty espresso with low acidity, and Ethiopian naturals bring berry sweetness that works well in fruity shots. Brewing a natural as filter? Use an AeroPress, V60 or French press, and grind finer if it tastes sharp, coarser if it turns bitter.
