The story:
Timbuyacu means boiling water in Quechua, and this farm in Colasay has been passed down through the family. This lot comes from the El Pante plot, grown at 1620 MASL as Bourbon de Colasay with a regenerative approach built on organic matter and agroforestry. It is the first direct collaboration between Nomad Coffee and the farm. Washed, then dried slowly for up to 20 days.
The taste:
Walnut comes first, dry and nutty, then a slow pour of toffee coats the middle. Yellow plum cuts back through with a soft, juicy sweetness right when things get rich. Medium body, gentle acidity, and a clean nutty finish that hangs around between sips. Nothing fussy here.
The feeling:
A proper everyday filter. Brew it in a Clever Dripper for a sweet, forgiving cup, or on a V60 if you like it a bit cleaner. It also works in the AeroPress when you want something quick. Great for the first coffee of the day, for sharing at the breakfast table, and for anyone who likes sweet and nutty over loud and fruity.
