The story:
Carlos Pola left the textile industry after 20 years and went all in on coffee in 2012. Our partners at Nomad Coffee now work with him on 100% direct trade. This lot is pure Pacas from Finca Las Brisas, grown at 1250 - 1300 MASL and processed natural: cherries floated, rested two days in shaded sacks, then dried on beds.
The taste:
Caramelized almonds and cinnamon open the cup with a warm, spicy sweetness, and dates bring a soft, jammy depth. As it develops, 80% chocolate and cocoa powder step in with a thread of caramel. Smooth body, mild and balanced acidity, and a long cozy finish. Pure comfort in a cup.
The feeling:
Made for the espresso machine, where the almond and cinnamon turn into a sweet, spicy shot. It also loves milk, so try it as a flat white or cortado and let the dates and caramel shine through. A great all day espresso for anyone who likes warm, nutty and chocolatey over bright and sharp.
