The story:
Carlos Pola runs Finca Las Brisas in the Apaneca-Ilamatepec range, fifth generation of his family and a former textile man who went all in on specialty in 2012. He uses mycorrhizal fungi and contour farming. Our partners at Nomad Coffee roast this mixed variety lot, grown at 1250 - 1400 MASL and treated with the honey method, sun dried for two days, then finished in the shade.
The taste:
Milk chocolate hits first, smooth and comforting, followed by crunchy California walnut and a deep note of brown sugar. Low acidity, round and creamy body, and a sweet, nutty finish that holds up beautifully in milk. It tastes like a chocolate bar that took a nutty detour. Zero harshness.
The feeling:
Built for the espresso machine. Pull it as a short shot for a sweet, syrupy cup, or stretch it into a flat white or cortado and let the chocolate and walnut sing through the milk. A dependable daily espresso for anyone who wants comfort over fireworks, and a solid base for milk drinks all day long.
