Washed Sugarcane Decaf
The story:
Finca Chambakú in Caldas is a farm our partners at Nomad Coffee work with every year, and Felipe Restrepo reworked the whole decaf process in 2023. Castillo and Caturra grown at 1400 - 1700 MASL are decaffeinated with mountain spring water and ethyl acetate from sugarcane, removing at least 97% of the caffeine. A final dry in mechanical silos gives a more stable, expressive cup.
The taste:
80% dark chocolate and muscovado sugar lead the way, balanced and sweet. Acidity is very soft, the body is round and creamy, and a hint of golden apple shows up in the aftertaste. Decaf that tastes like proper coffee, which is more than many people expect. Smooth from first sip to last.
The feeling:
An omniroast, so it works in whatever you brew with. Pull it on the espresso machine for a sweet, chocolatey shot or go milky with a flat white or cortado. For filter, try the V60 or AeroPress for a clean, mellow cup. A good pick for late coffee drinkers, for anyone cutting back on caffeine, and for people who refuse to give up on flavor.
