Carbonic Maceration
SCA: 84+/100*
The story:
Negele Gorbitu is a cooperative founded in 1975 in the Yirgacheffe highlands of southern Ethiopia, bringing together over a thousand smallholder farmers. This tiny 300 kg lot of local heirloom varieties grows at 1900 to 2200 m. Hand-picked cherries go through carbonic maceration for 4 to 5 days in sealed steel tanks. Our partners at Gringo Nordic roast it in Gothenburg.
The taste:
Pineapple leads the cup with a juicy, tropical sweetness, followed by ripe blueberry and a delicate floral finish of violet. The profile is intense, complex and fruity, shaped by the oxygen-free fermentation and the slow sun drying on raised beds. A vivid cup that keeps its clarity from the first sip to the last, with a lingering sweet aftertaste.
The feeling:
Brew it in a V60, Chemex or AeroPress to keep the pineapple bright and the violet delicate. A coffee for curious drinkers who want to taste what carbonic maceration can do, perfect for a slow weekend morning or for sharing with friends who love fruity, experimental cups. Pour it slowly and take your time with every sip.
