The story:
Our partners at DAK sourced Poppy Soda from El Placer, a 14 hectare farm in Calarcá, Quindío, Colombia, run by fourth-generation producer Sebastián Ramírez. This Pink Bourbon grows between 1650 and 2000 MASL and goes through a multi-stage washed process with anaerobic fermentation, immersion in water and two controlled drying phases. Despite all that work, the cup stays remarkably clean.
The taste:
Lemonade and jasmine tea greet you first, with ripe peach underneath. The cup is bright and clean, with a soda-like sparkle that explains the name. Acidity is lively but friendly, the sweetness is soft, and the finish is crisp and refreshing. It is a coffee that tastes like a cold drink on a warm day, brewed hot.
The feeling:
Brew it in a Chemex or V60 to keep the clarity high. This is for anyone who loves tea-like, bright filter coffee and wants a clean cup with real character.
