Anaerobic Washed
The story:
Our partners at DAK picked Darling from Danche Washing Station in Gedeb, Ethiopia, where ripe heirloom cherries grow at around 2200 MASL. The coffee goes through a 48-hour anaerobic fermentation in sealed tanks, then two washes and 15 to 20 days of slow drying on raised beds. DAK counts it among its favourites.
The taste:
Wild florals lead, followed by peach iced tea and a black tea finish. It is light, elegant and very tea-like, with good clarity despite the extra fermentation. The cup stays clean and delicate from the first sip, and the peachy sweetness lingers on the tongue as it cools, like a summer afternoon in a glass.
The feeling:
Brew it in a V60 with gentle, low agitation to keep the cup clean and the florals intact. This is for anyone who likes their filter coffee light, floral and tea-like. If you want heavy fruit or dessert sweetness, look elsewhere. If you want something elegant to sip slowly in the morning, this is the one.
