Carbonic Maceration
The story:
Our partners at COFFEELAB picked this Heirloom lot from Gedeb, Yirgacheffe, grown between 2100 and 2250 MASL. The star here is the process: carbonic maceration, a trick borrowed from winemaking. Cherries ferment in sealed tanks filled with CO₂ before drying, a method Saša Šestić helped put on the map at the World Barista Championship. Expect little in common with a classic Ethiopian profile.
The taste:
A fruit cocktail with a fizz. Melon and passion fruit lead the way, while a funky kombucha note adds a sparkling, tangy edge. Acidity is high and lively, sweetness is high too, and the body stays medium. Hints of pineapple and lychee round it out. Think tropical fruit punch with a grown-up twist.
The feeling:
Brew it in the AeroPress, inverted: 17 g of coffee, 250 g of water at 92°C, medium fine grind and a 2 minute brew. The paper filter keeps the sparkle and lets the tropical fruit shine. A Chemex or V60 will also do the job if you prefer a longer, lighter cup. Perfect for anyone ready to try something wild.
