Double Fermented Natural
The story:
Our partners at COFFEELAB brought in this lot from Finca Quebraditas in Oporapa, Huila, a young project run by Edinson Argote and Ángela Rojas. Grown at 1650 to 1800 MASL, the SL28 variety (a Kenyan legend) goes through a double fermented natural process: 72 hours of first fermentation, a rehydration, then a second round with selected yeasts. Oporapa is still off the specialty radar.
The taste:
Welcome to a fruit candy shop. Banana leads, thanks to the esters born in fermentation, followed by hard candy sweetness, soft vanilla and a pop of raspberry. Acidity and sweetness are both high, and the body is sticky and syrupy. Let it cool a bit and deeper, more fermented notes start to show up.
The feeling:
Built for the Chemex, where the coffee shows off its bright fruit and candy layers. Try about 24 g of coffee to 400 g of water at 92°C and stop around 4 minutes. Want more acidity? Pull it closer to 3 minutes. Also lovely in the AeroPress or a V60 for a punchy, playful cup. Perfect for curious drinkers who like their coffee loud.
